Probably but nobody really knows at this time, anyway it`s not really a problem if DFI release just a SLI model, you can still use just one PCI Express video card.

DFI is usually the last vendor to release on newer tech, however they seem as of late to be the best enthusiast minded board maker out there, especially when it comes to voltage flexibility. More then likely they too will offer a stripped version as well as a deluxe version. You'll be able to run one video card @ x16 and 2 cards @ x8 mode on the ultra offerings.

I think that Nvidia kind of launched 3 versions (packages) of NF4.
A minimalisitic (no RAID, and very few goodies)
Deluxe (SATA RAID, Gigabit etc.)
SLI (Deluxe + 2 PCIe x16 ports)

I think that most Mboard makers will make atleast a SLI and non-SLI option as there will be some money to save on production costs. Personally I think that going for a minimalistic and a SLI board makes most sense. Ethusiast will go for SLI and those on a budget will go for minimalistic. I don't think that SLI boards will be that much more expensive than a Deluxe board (probably 20-40).
