I have an old computer I'm planning to donate but want to make sure it's in running condition.

I pulled the old Maxtor 30GB IDE AT HD and was wondering if I could upgrade the system.... but there are very few AT HD on the market for sale.

So I'm wondering if I could replace it with an ATA100 HD?

30GB ide drive is going to be a ata drive - pata.

you can swap it out w/ a ata100 drive but check the bios and m/b to see what size hdd it can handle
