Will a standard desktop ATX psu fit in a 2U rackmount case?

Probably not, my 4U rackmount takes a standard PSU without much room to spare, but if orriented differently, your 2U might.

(Mine is mounted tall side, for more room on the expansion card side of the case.)

It won't fit. 1U is what, 1.6"?

1U is 1.75", 2U is 3.5". ATX power supply on the shorter edge is 3.5". It will fit (and in fact specs for 2U cases say ATX).

If the case says ATX form factor, and it's 2U, it'll accept a standard ATX power supply.
