Will a seasonic x750 power a GTX 480 + a 8800 GTX?

I have a i7-930 system OC'd to 4GHz with 12GB of RAM (3x4GB) and a GTX 480 stock clocks. I want to put in a 8800 GTX to accelerate the Physx in the system, and I'm wondering if I have enough power?

I also have a x-fi, a 5 USB Devices...

Don't worry. You will have room enough for adding the 8800GTX for physx. There is not problem at all. The X-750 is an amazing PSU.

but another GTX 480 is definitely out of the question? remember, I do have my system OC'd to 4.0GHz..

Yes, it is. In my opinion the Seasonic X-750 is not the proper PSU for running two GTX480 in SLI. Take in mind that in some cases they can pull from the PSU even more than 600W, so you won't have room enough for handling the rest of your system (although the X-750 can really provide more that those 750W).
I would go for a 950W unit. The Corsair TX950 is a great option (in case you decide to buy another PSU). It performs extremely well, it's unexpensive but it's not modular.

I run two 480's in sli with dual water loops and am using a corsair hx1000. I wouldn't even consider anything under 1kw for dual 480's unless you want to press your luck.

I checked out what it would take to swap in two GTX470s to my system and 750Watts was right on the limit for that. Definitely take a 950W+ PSU for anything more.

You will be in the limit but It can do it.
Anyway, in my opinion, a GTX470 for physics is too much. The 8800GTX will do the trick.
Save your money and wait for the future models from ATI or nVidia if the GTX480 doesn't give you power enough. Sell it and buy a powerful one next year.
