I'm building a brandnew comp, the DFI UT SLI-DR is new and stock BIOS version, it is not SLI certified for 7800 series back in 2004, would I need a BIOS update?

I don't think the motherboard BIOS matters for this, but you should update it anyway on this board. I'm putting together the same components and will be going to the 704-2bta BIOS immediately for memory compatibility reasons. Use the Tmod update CD if you don't have a floppy drive.
