i heard there's a shop in San Diego that sell fresh Uni by the box that only opens at early hours. The Uni begins as bright yellow and literally turns brown within 2-3 hours.

Those are good. Last I had them, I tried both the ones imported from Santa Barbara and the ones imported from Japan and both were great (different textures).

Also live uni @ maki zushi in Tustin.

Finally, live uni @ Quality Seafood in Redondo (unwashed, so has a much...grittier taste)

It is the consistency and texture of cold snot but I like the flavor. Very mild with a nice aftertaste. I love uni.
