Why is my salsa giving off gas?

Just made salsa:

1 roma tomato
1 can diced tomato
1 fresh jalapeno
1 white onion
lime juice
cilantro
cumin
cayenne

All in a food processor.

After an hour in the fridge, open the container and it smells like 'foul metal', something metallic. It smells fine if you get reaal close to it but the whole kitchen definitely smells metallic after opening the salsa. Is it fermenting? How do I stop it? The only thing we changes was adding the can of diced tomatoes....

Dig the can from the tomatoes out of the trash and make sure there are no discolored spots on the inside or other indications of bad /damaged canning.

Canned tomatoes are fairly awful without cooking.
Otherwise the only the peppers would typically taste metallic as well.
Onions would be more of a sulfur smell/taste, not metallic.

Not enough ghost peppers. Those are used to mask the smell made by the reaction caused by the tomatoes and onions and also add a bit of extra taste. Check for it at the grocery store, you need to put about 1/2 ghost pepper per cup of salsa that you make.

GOOD salsa always makes me gassy....

My wife makes a killer salsa using canned fire roasted tomatoes. Nothing wrong with using canned maters for some things. (and they're usually cooked in the cans)
