Why is it that store bought salad dressing never tastes as good as restaurant ones?

I would guess it is a combination of factors.

For one, the nutritional value of the dressing is of no concern to the resaurant, so they can add the proper amount of fat to the dressing without having to worry about someone getting sticker shock looking at the nutrition label.

Another reason is that (at least in higher end resaurants) the dressing is made fresh as opposed to bottled with preservatives. Fresh lemon, fresh garlic, freshly ground pepper, etc. all will contribute to a better tasting finished product.

Finally, it seems to me that almost everything tastes better at a resaurant. Having the exact same meal in your house without the atmosphere certainly takes something away from the experience. This is especially true if you are preparing the meal yourself as opposed to having it served to you.
