It's not insurance on your life at all, but rather insurance that you WILL DIE eventually. Shouldn't it be called Death Insurance?

Just because the death rate from all causes, for all time, in the the past has always added up to 100%, doesn't mean that your insurer isn't willing to play the odds. In the long game, one of their salesmen will sell a policy to the highlander.
