Why is fried rice usually yellow?

It usually turns out fairly yellow when I cook it. My guess is a combination of soy sauce, sesame oil, and egg does it to mine.

It's the egg.

Brown comes from soy and/or whatever brown sauce is added. The rest is burnt egg, oil, or ingredients.

if the fried rice you are getting from your local Chinese rest is yellow, they are probably from the Fujian Province, they were either taugh wrong (chances are, they were not chef before they came over to the US) or used cheap food coloring, good chinese fried rice should never be yellow.

Saffron or turmeric? We usually don't put that in the fried rice we make at home, just either soy sauce or salt, so our fried rice is usually white or brown. Some people also beat an egg into the rice, so the grains are all coated and that makes it yellowy as well.

We should define what sort of fried rice is being talked about here. My Chinese and Taiwanese (home made with whatever is convenient) fried rice is more brown than yellow.

The Thais have a fried rice, the Cajuns have a fried rice, I'm guessing that Uncle Ben's has a fried rice... whose is yellow??
