Why don't most online stores let you choose your shipping method carrier ?

logistically a waste of time and resources, probably. plus I'm sure there are contracts between shippers and companies for specific rates.

Because they can't be bothered. It's tough enough to keep their margins within tolerance without bending over backwards to give you the delivery option you care for. Online margins are very thin.

Probably half of the stores I order sciency gizmos from for work let you choose between UPS and FedEX.

It would be more expensive/raise price of goods/likely cause more errors too just to give you the choice.

They sign agreements for volume discount and supply chain integration.

Because the retailer gets a discount on freight if they can guarantee a certain volume to one carrier.

Wait a minute. You mean B&M stores have fatter margins? I thought their inflated prices are entirely justified by storefront operation costs. Guess not. Margin++!!
