why don't all potato chip bags have a ziplock seal?

I don't think Archers Farms is that great, either, for the price. Give me regular old Lays any day of the week.

A penny or two doubles the price of the bag. It also creates an easy way for the consumer to seal the bag and therefore will lead some people to eat less. Both of those things are bad for the manufacturer, so why would they do it?

Difficult to nitrogen flush as well leading to a lower shelf life.

I have my doubts that it's as low as a penny or two a bag. Chip bags aren't made of a material that could be made to incorporate a ziplock feature. They'd either need to switch to material that could be formed into a ziplock (which from what I've seen are noticeably thicker, so require more raw material) or require a gluing operation where the ziplock is added to the bag. Both of these would require more materials and new machinery. With all that I could believe that the cost is more than just a few pennies to get that seal.

Businesses would only care if people chose to buy one product over another based on the presence of a zipseal. For chips, I'd tend to believe standing in the store just are looking for something that tastes good and/or is cheaper than the others. Unless the presence of a ziplock influences people's buying decisions the businesses are never going to change.

The zipper seal really does not improve shelf life anymore than a chip clip or simply folding the bag. As I stated earlier it actually may even impede shelf life due to the difficulty of nitrogen flushing as well as the permeability of the zipper seal itself. How many high quality chips have you seen with zipper seals?
 
The quicker the food goes stale, the quicker you will have to purchase more. Why should they reduces their quantity sold and raise their cost by using zip lock bags! It would hurt them in two ways.

Or, you could just buy a few clips and never have this problem...

Because, if they're the first manufacturer to do it, then people who "I hate when my potato chips go stale, I always throw out half the bag" will flock to that brand.
It doesn't matter if people eat less - it's how many they purchase. At least, I hope, their target market isn't people who make a special trip to the store 7 nights a week for potato chips.

Of course, then the other brands will switch their bags over so that they can compete. And, if many people are like me, they only buy whichever brand is on sale for BOGO; I can't remember the last time I paid full price. And, if the brand on sale is a crappy brand, I just don't buy chips.

I don't see how the nitrogen flushing or the zipper permeability are issues. The bag is still heat sealed at the top like they always are. Reference the archer farms bag.

Archer Farms chips are also pretty high quality.
