Why does my weight jump so high after eating pancakes?

Sundays I usually indulge myself & eat a big stack of flap jacks. However, the next day I see that my weight has jumped on average from 5-6lbs. After a few days my weight is back to normal. Something about the pancakes makes me gain this sudden weight-does anybody have any ideas?
 
Your body treats pancake flour like sugar due to the high glycemic index, your body needs more water to filter the sugars out so it retains more water until it is gone.
 
Pancakes do that. I remember reading that's how Sylvester Stallone gained all the weight he had to for the movie "Copland".

That would explain why I dont urinate as much as usual Sunday night.

Well, wouldn't that be *any* flour based food ? What makes pancake flour any different from bread flour ? Both are grinded up wheat.
