Why does chicken turn rubbery when you microwave it??

Sitting here eating my lunch at work, I find my chicken kind of rubbery after nuking it too long. Why does chicken get rubbery, yet meats like pork and beef don't?

I dunno but that's why I hate microwaving chicken. Subway does that crap with their "Grilled Chicken" sammiches

i think all meats suck when you nuke them because you are zapping all the moisture of of them

yup.. had a nice juicy steak the other day... when i got it to work and nuked it... it was like shoe leather :|

It is possible to reheat meat in a microwave oven without making it tough or leathery. What you need to do is lower the power setting, and cycle the power on and off, much like the defrost setting does.

It takes longer, but it works great.
