Why do they do remakes of movies, then completely change the plot?

I was reading some reviews of some movies, and got to thinking about two of my favorite movies, Vanishing Point, and Gone in 60 Seconds. Both were remade in the '90s. And in doing so, they COMPLETELY changed the plot.

Vanishing Point Original:
Pill popping ex-racecar driver jaded by the world and events that plauged his life was running and was the embodiment of a "last free hero". His job was a delivering cars, he made a bet that he could make it from Colorado to SF in 24 hours (iirc)

Vanishing Point remake:
A guy was going to the hospital to see his pregenant wife deliver a child. It was his own car.

Gone in 60 Seconds Original:
Insurance investigator runs a stolen car ring on the side, but only steals insured cars. One of the guys in his ring has a beef and ends up tipping off the cops.

Gone in 60 Seconds remake:
An ex car thief is pulled into stealing cars again because of a crime ring who threatens his brother's life because his brother screwed up a job.

They're so different they might as well give them different titles.
