Why do most professional cooks ONLY use olive oil?

I hope not as olive oil is NOT healthy after being heated to high temperatures. Coconut oil is much more healthy.

Coconut oil is actually one of the few plant oils that are SATURATED fat and not healthy. Olive oil has the highest concentration of UNSATURATED fat and is healthy.

True about it being saturated fat.

Educate yourself on saturated fats and their role in the body and you'll realize that they're not all bad. Coconut oil is full of good saturated fat. If you care to learn, read The Skinny on Fats as linked above.

They don't. Butter is widely used. Only in the Italian kitchen and other South European kitchens is Olive oil the main "fat".

In my experience, more expensive. It varies quite a bit in price depending on where you get it from and the quality, though.

its reasonably healthy. but it wont work for frying and such.. its smoke point is low or something

what about not quoting companies that are trying to sell you stuff? they have incentives to say what gets you to buy their stuff. and what's mercola, and thai food and travel?

Harvard's studies are out of date? That link made a good point about eggs... In the 80's everyone was told, "don't eat eggs!" and in recent years more studies are showing that eggs are good. Things often flip flop... as is the case with coconut oil.

Mercola is an MD. Thai food and travel is a link I found in google.

the problem is, you need to critically analyze articles before you believe what they say. just because someone is a md doesn't mean very much. and just googling isn't right either. anyone can put up a site. and say anything on it. your links aren't quite as good.

i would rather trust harvard. and the national library of medicine. if you look on there, there are quite a few items listed.
you need proof to say that saturated fat is good, when nobody else (that is respected) says that it is. where's your proof?

It depends on what you are making. Olive oil imparts a flavor that compliments many foods, but not always. You would not use olive oil in baking. Olive oil pastry? Na.

Chefs will use a vegetable oil with a higher smoke point and neutral taste for frying.

Butter or butter and oil can be used to sautee many things, but not fry chicken.

It's all about what you want to do.
