why did the price of the 5970 spike?

Probably because too many people realized the 5970 was a steal being the fastest card on the market while also not being the most expensive.

Also being EOL supplies are limited, but if the demand is still there... price hike.

The only time it was ever 'low' if 500 dollars is low, is when the gtx 580 launched. And that was for ONE (1) model of 5970. Most often the cards were 699.99 or there abouts. I'm sure AMD backed that sale at newegg so it would be considered a competitor of the gtx 580.
This is my view on things.
You can also use online history sites to view history pricing, and it shows about 650-725 as avg pricing.

edit: Also when they first launched back in dec 09, some people probably got lucky and got them for around 600 dollars. I have a feeling the best deal on the new dual 6990 might also come with the launch cards. After that , they are always jacked up, because of scarcity.

Because its still the fastest card on the planet ( not for long though). The 4870x2 kept its price way after being EOL'd.
