Why College coaches in Football have State Troopers...

Because college students tend to rush the field and such after games, and college students are filled with enough emotion that they might hurt a coach after they lose or something?

OK, I understand that, but why State Troopers and not regulars Cops?

Probably because the cops from college cities have their hands full with the activities OUTSIDE of the stadium.
