Why can't we block email addresses?

Am I missing something or are we missing this important feature? When I say block email addresses, I'm talking about how the sender won't be able to send out their message or they get an "undelivered" email back.

Is there an email client that does this? Gmail just sends the email straight to the trash can, but this is not good enough and isn't real blocking.

Why are we missing this feature?

I think some of those "fluffy" mail clients do this, like incredimail. I think it has a feature where it will auto send an undeliverable message, but it is just incredimail sending it from an "undeliverable@something.com" message, so I'm sure the spammers already know to count the bounce as a response from an active account, rendering the feature useless.

One of the biggest flaws with the internet design is it was not designed for controlling malicious users . Email works like it does because when it was created nobody conceived that the people using it would be jerks and abuse it. I can remember when the internet was just getting started and how all the rules for things were strictly enforced, send spam - account closed no reprieve, send binary to a text newsgroup - account closed. There was essentially a zero tolerance policy for abuse. That has changed into only look into abuse if it effects enough people.

Get a real email provider (ie - not Google). I block addresses all the time. The message never gets downloaded in my client (Outlook) as my email provider blocks it at the mail server level.

Because the mail has to be processed by another server to determine if it is spam or not. You can't stop it midway without something reading it and returning it.

A system that does work and some companies use it is:

You add the senders address to your account, the address is encrypted mixed with your address and returns an address like c8O2!0Zt0KKzjMnf

You then give that to the party you want to be able to send you email instead of an email address. The servers read the key and determines if it is valid for the sender and recipient . It will only work from that party and nobody else.

but the sender can send as any arbitrary email address, are you going to block them all?

I would like to block a domain or only allow certain emails to reach me. I can kind of see how this wouldn't be possible, I just find it incredibly annoying.

I just think this feature is long over due.

These features exist and have for a long time. If you are looking for them in a free email service like Google, Yahoo!, Mail.com, etc you won't find them.

What's an alternative paid version that is comparable to Gmail?

Something comparable to Gmail would probably be another free email service. If you want something more than Gmail, Google "premium email providers" and compare the features.
