Why can you order steak rare and not hamburger rare?

Steak has less surface area possible of acquiring bacterial infection. Since hamburger is chopped the microorganisms are dispersed and provided with more surface area for growth.

you can get hamburgers rare, I've done it before - but you're not going to have that option unless you go to a classy restaurant. plus, hamburger patties rare don't hold together well, its more like a sloppy joe, except without the sauce.

you can get hamburgers rare, I've done it before - but you're not going to have that option unless you go to a classy restaurant. plus, hamburger patties rare don't hold together well, its more like a sloppy joe, except without the sauce.
As stated above, very few places risk serving rare, medium rare, or medium hamburgers now-a-days as the risk for E. coli is too high.

As stated above, very few places risk serving rare, medium rare, or medium hamburgers now-a-days as the risk for E. coli is too high.

You know, I grew up on medium, and medium-rare hamburgers, so did my parents and never ONCE did I or anyone in my family have E. coli poisoning.

I'd say the fear is more hype than reality. My whole family still cooks our burgers medium. My Mom still likes them medium rare.

As a matter of fact, I have been sick from chicken, ham, and cold cuts, but never once from beef.

I'm not saying it doesn't happen, I'm just saying it's far more rare then it's made out to be, and E. coli is nothing new.

As long as the center of the beef reaches at least 160F, you have no worries.

I love my meat on the rare side. One of the benefits of ordering meat directly from a slaughterhouse is you don?t have to then worry about eating it rare 😀
 
Simple.

Steak=bacteria inside the flesh=minimal. Surface bacteria is eliminated by cooking the surface.

ground beef=bacteria from surface is mangled into every part of the meat, therefore, the whole thing needs to be cooked to 160F.
 
Most places I've been to won't let you order burger less than medium. Odd.

Why don't you ask this question to Jack-in-the-Box?
 
Only the outer surface of the steak needs to be "sanitized" since it has been exposed to bacteria. Every little fine piece of hamburger has been exposed, making it a breeding ground for harmful bacteria. If you don't cook it all the way through you can get major sick.

Kibbeh, I think? But that's raw lamb...
 
Plus, steaks come from one source, so there is less chance of a widespread outbreak.
One ground beef patty could have come from a number of different batches.

Red Robin asks how you want your burger done.
Though the idea of a rare hamburger has never appealed to me.

Steak on the other hand has to be pink to be good.

I love a nice rare steak. 😀

And I used to like eating hamburger fairly rare until a friend of mine got sick from E.Coli-tainted hamburger... he ended up in the hospital for over 2 weeks, lost about 50 lbs and he was very lean to begin with, and it almost killed him. So now, I only eat well-cooked hamburger. There is no telling what they grind into hamburger. :disgust:
