You can say that about everything. I'm sure you have plenty of luxuries and spend wastefully instead of helping humans in Africa or even your own home town.

but im not a pretentious ass about my books and coffee... oh wait

My point is that there is no moral superiority in treating some chickens better than blowing your money on anything else that doesn't help another human.



Then these people who act like they are superior for eating a chicken that had it's cage opened for it 5 min a day start trying to pass ordinances that ban awesome food like foie gras because they run on whatever emotional appeal hit them last and can't be reasoned with.

paying 100% more because we don't want to put a bird in a cage means that money can't be put to a better use. If you honestly care then help humans in Africa instead of birds in Arkansas.
What if we don't honestly care about people in remote parts of the world, and would prefer our own corner of the world to be better than it is?

Whoa there Mr inferiority complex, different people worry about different things. No ones voted you arbiter of what causes most worthy.

Personally I like to know about the way my food has been raised, and animal welfare does matter to me.

We could argue if you ate less, you'd have more to give those in Africa too.

While there is properly raised livestock, any luxury food item like this that people with credit are now diving into there are farmers trying to get enough to market.

Personally I don't get how people get so attached to one food over another. For me meals are really just something I have to do and usually get in the way of things I'd rather do.

Basically just look up what grade it is. A is the best if you are talking about lobes. The rawest version of foie gras is just the liver. No additives, fillers, etc. From there, you can make anything. Or, you can buy foie already made into things like pate or terrines. Do you have the patience, time and experience to make something yourself? No offense, but unless you love cooking, it's probably not worth the effort to you. It's like making your own pastrami. It's doable, but do you want to? Nothing wrong with a terrine or mousse that you linked to.

You answered my question perfectly. I had looked over various foie gras and you're correct, at least at this time, I don't think I just want the raw liver and have to make my own pate. Maybe it would be fun to try it at some point, but for now, maybe I'll try that mousse or a terrine.

One other question -- I've noticed that at least on these online sites, most foie gras is made from duck liver rather than goose liver. Is there a significant difference in taste?

That's a good question and one I've had myself. I honestly don't know the answer and I ask that you research and share the results if you figure it out.

I've tried it a couple of times, but never could get into it. One of those things where the texture + temperature just put me way off.

There are other ways to eat it, maybe I'll try that some time.

Don't like the texture of Foie. It's similar to that flabby pork belly which is only one small step from being lard. I like some items that contain Foie but don't understand people who can eat an entire goose's liver as an entree.

Foie Gras is delicious. However, if you're looking for something that keeps forever, is incredibly tasty, and far cheaper, that you can eat on bread, by itself, etc - look into making some pork rillettes. I'm not suggesting that will ever replace the meat-buttery flavor of foie gras, but you can make some rillettes and keep them in the back of the fridge for damn near 6 months if they manage to not get eaten first.
