Why are flat surfaced sea and aircraft invisible to radar?

Watching science channel. They said the ships are built with flat panels that "absorb and deflect radar". Does it have to be flat? I've always wondered how radar stealth works.
 
i remember hearing that radar works off angles, particularly 90degree angles, i dont' remember why but that's what i remember hearing
 
round = there is always a portion that is perpendicular to the radar wave, therefore it will be reflected straight back
flat = only one angle where the wave is perpendicular, therefore chances are high that it will reflect off at an angle
