WHS features on Windows Server 2008?

I have a copy of Server 2008 from school for free.

Currently I have it running IIS and as a media server, but I wanted to add in the backup capability of WHS. Is there any way of adding the Windows Backup used in WHS?

No, there isn't. The backup application is unique to Windows Home Server, which is based on Windows Server 2003.

The Install routine for WHS calls routines from SBS 2003, Vista/Server 2008, and Server 2003.

WHS can do what you want (IIS, media server, and backups). Server 2008 can't.

For 2008 server MS has 2007 Data Protection Manager. It's a much more complex DDup system for corporate networks. It's definitely not free and requires licenses for the machines that are backed up.

I am playing out with some exchange stuff, I think server is required for exchange to work. -- Does anyone know for a fact?

Exchange Server 2007 requires either Server 2003 or Server 2008. The production version only runs on a 64-bit system, but there's a 32-bit Evaluation version, too.

You also need Active Directory and DNS installed.

If all you want to do is test Exchange 2007, you can get a virtualized version here. It'll run under MS Virtual Server 2005 R2, also free.
