I suppose it sounds selfish but I'd like to see as much as possible. I see a large number of cruises start in Barcelona, hit various locations in Italy, Greece, Croatia and then end up in Venice, which seems like a reasonable stopping point. I would love to do 10+ days but it would be a stretch. I am thinking we can do 10 days total with airfare from the US East Coast.

That's exactly the attitude you should have, you want to see as much as possible.

There are several 7 days itineraries and a 9 day but they don't offer a lot of variety IMHO.

Minimum nights - Max nights first try 7 to 9 then try 10 to 11 which gives you a lot more choices
I narrowed down the cruise lines to Celebrity, Holland America and Princess ... the others are either low end or high end or avoid (MSC, etc.)
You can also select a budget, certain islands you want to visit, islands to exclude, departure port, etc.

We've never been on a Med cruise but my ideal itinerary would include Italy, Istanbul, Turkey and lots of Greece.

Any idea of what its like to visit greece now? I'd love to see some of the old architecture and stuff, but wondering about the whole bankruptcy thing and protests/etc. Or is that usually away from the touristy places?

You're welcome, my wife also wants to take a Mediterranean cruise. I've been researching it on and off for the past few months. Since airfare is so expensive we want to see, do and experience as much as possible without making any compromises or breaking the bank, which of course is nearly impossible.

This looks good but I'd like more port stops (less wasted time) and wish it visited Santorini, Greece.

No clue, there are some world traveled AT'ers who can probably chime in.

skip the cruise. Just go spend your days in some Tuscan hill town like Siena or the surrounding villages.

but if you must be a boat tourist...stick to eastern Italy, Greek isles.
