Specifically, what do the following functions do?

1) diode test... how do you test a diode with it??
2) square waveform thingy - no idea what it's for
3) transistor hFE test - what's hFE?

Any electrical guys out here???

1 - checks continuity. a diode will pass DC one direction and block it the other. so with the + and - one way, you get 0 ohms and the other way you get infinite
2- don't know what you are talking aboot
3- dunno

Uh, on every multimeter I've used if you have it biased in the right direction it will tell you "turn on voltage" of the diode...so for a common diode about .7V
