About 2 years ago I learned how to cook white rice the spanish way. And let me tell you, spanish rice is tons better than the normal steamed white rice crap. I also didn't know about the type of rice used (Jasmine) in the spanish rice my girlfriends family cooked, but once I learned I cooked it constantly. It's much different than just steaming the rice.

So since I'm trying to get cutup, I decided to learn how to cook brown rice and tried cooking it. First time it was not that great as I didn't realize you had to let it stay in the water much longer than white rice.

2nd time was pretty good becase I let it cook for the proper amount of time.

But last night, man oh man, I made some GOOD brown rice! All I did was add in about a half cup of chicken broth when I went to fill the pot up with water. I did it 2 more times as well (because I had to fill the pot 2 more times to let it cook longer to soften it up) and when it came out in the end ... holy crap it was awesome!

I was talking to one of my friends and she told me that her boyfriend puts beans in his as well, so this is making me wonder what else I can add into it to make it taste even better. Anyone have any recipies?

EDIT:

oh yah, I also put a bunch of sliced onions in the rice as well, and I heat that up in the pot with a TINY bit of olive oil for about 10 minutes before, lightly "frying" it per se. Then I add in the rice grains and I cook it without water in the pot while moving it around constantly, until the rice is starting to get even darker. THEN that's when I start adding the water and I pour in some salt.

If I'm using it with a curry I just boil it natural as a curry has plenty of flavour, which in most cases will own any flavour I try to put into the rice.

I just let my rice cooker do the work as usual, then use it in a dish as I would any other rice.

thing is, most people say brown rice tastes bad and nasty. but hell, the way I cooked it now, I don't want to ever go BACK to the jasmine white rice. The brown rice cooked this way tasted better than any white rice i've had before.

I mix it with black beans and ground turkey, then use it as filling for tacos. I cook the turkey with some onion, cumin, chili powder and red pepper flakes (the store-bought taco flavoring packets have a ton of sodium in them), then add the beans to warm them. At the same time, I cook the rice. When everything's done, I mix it all together.

It makes a quick meal - probably a dozen tacos depending on the size. That's about 6 meals for me. It's pretty affordable too.

Maybe it's because lunch time is here, but that sounds good. Maybe I'll make that tonight for dinner.

My favorite rice is a mix by Lundberg that has 7 brown rices in it. I think they're all (or at least most) short grain.

I cook it on the stove with a bit more water than necessary for about 50 minutes. I add a bit of salt and about a half inch of butter before adding the rice. I prepare a bowl with frozen corn and black beans in it. When the rice is done I throw it in the bowl with the rice/beans, mix it up, throw in some shaved black and green peppercorns, bit of corriander. Mix it all up.

I eat it almost every day during the week. Good food and always goes down smooth.

my wife just does white rice in a pressure cooker. The beans are where the magics at. She cooks Salvadorian or Cuban beans. They simmer for about a whole day and then we serve them with the rice.

My wife's half Persian, and we go through a *ton* of basmati rice. Tadiq is AWESOME. They spell it tah-digh in the wiki article.

Typically I make a lot at a time using a can of diced tomatoes, chicken broth, and little hot sauce. I freeze up individual portions ( usually along with some veggies mixed in) so I can just reheat and dump in a can of chicken when I get home from work or the gym.

I'm usually feeling like a lazy bastard once I get home and I don't always eat at home every night so it works nicely.

Red, and brown especially, rice

It kind of spoiled me. Had white rice again the other day and there's just no comparison. I guess it's the same kind of situation when one goes from white to wheat breads. There's so much more flavor and texture that it's hard to go back.

I saute chicken breasts in olive oil and curry powder, steam some carrots and cauliflower, and serve it over brown rice.

I think we just have a difference in vocabulary here...you're looking to throw ingredients into the rice as it cooks and consider it "rice," whereas if I were adding ingredients to the rice I would call it by the dish it becomes -- jambalaya, risotto, paella, pork fried rice, etc. Otherwise, when I'm serving "rice" it's generally plain and served with something over it...red beans, stirfry, etc.

well what i mean is that before i put water into my rice, i do a few things.

first i put some oil in the pot (very little, just barely coating the full bottom part) and then toss in about 1/2 to 3/4 of an onion sliced up and i let it kind of "fry" for about 10 mins, until it is soft and starting to turn brown.

then i put in the rice and i do the same for about 10-15 mins, but i'm constantl moving it around. it mixes up the onions with the rice , as well as the oil, and it also cooks the rice slightly. i do this until the rice starts to darken and is cooking somewhat.

then i put in a 1/2 cup of chicken broth, then about 1.5 cups of normal water to fill the pot. i then let it steam the water out of the pot, and i repeat this filling process 2 times.

i wouldn't really call it anything other than "brown rice" and possibly add "with onions" to the end of it.

in a rice cooker it's more of just adding in the rice and putting in the water, andn letting it steam.

Heh in the last 2 weeks or so, I've been eating much healthier and I have noticed a decent change in my abs. That's what I'm going for. It's good though when you can eat tasty stuff and still get cut up :)

I made some Brown Rice the other day. Funny, it was white when I put it in the cooker!

Seriously though, Brown Rice is delicious alone, so you can add anything you like to it and still be a winner!

It is healthier, in the regard that brown rice is lower in calories and carbs and higher in fiber. But long-grain rice, such as jasmine, is still pretty healthy, and actually has more protein and thiamin than brown rice.

I think as much of the appeal is the taste. It's got its own flavor which I've come to prefer. In that regard, it is kind of like wheat vs white breads. Both are good, though.
