I cut out the fat when I eat steak, so if it's lean it's better.

Prime is more marbled than Choice. Choice is more marbled than Select.


BTW- I bought some Angus Certified Beef today which is supposed to be better than Prime. I'll tell you more after I grill it tomorrow.
