The Pentium D 805
http://www.newegg.com/Product/Product.asp?Item=N82E16819116001
and an Asus P5VDC-MX mobo
http://www.newegg.com/Product/Product.asp?Item=N82E16813131587
seem to be a good pairing for a budget office pc (not overclocked). I would like to use 1gb of memory, 2x512 sticks.

The mobo, though, has 2 slots for DDR -- and 2 slots for DDR2.

Which would be better for this setup -- DDR or DDR2 ?

What would be a good memory choice? (How slow in memory speed can you go without taking a performance hit?)

Thanks in advance for any suggestions....or for any critique of the cpu/mobo, for that matter.

I would go with DDR2. DDR is going to be starting to phase out, but DDR2 will still be around for a while. Since you aren't overclocking, and the 805 only runs on the 533mhz FSB, any speed of DDR2 will be plenty, but I would get 533mhz DDR-2. This PQI is what I went for myself, and it works well for me.

I have it running on my Gigabyte 8N-SLI since my 920 wouldn't OC with a crap on that board.

technically if you want to run 1:1 on your cpu/mem, all you need is PC2100
on a DDR2 standpoint:
i dont even think PC2100 exists for DDR2, the lowest i've seen (mainstream) is PC2-3200
you'll most likely buy PC2-4200, newer motherboards can support PC2-5400, and for "future proofing" maybe PC2-8000
