Which kinds of frozen seafood are still fresh-tasting?

Nothing frozen will taste quite as good as it does fresh, but the most important things about frozen seafood are the way it was frozen and that it stays at a steady very cold tempeture...any thawing & re-freezing will ruin it.

Hmmm... well, which kinds of seafood are absolutely horrid tasting after being frozen and thawed for cooking?

Just stay away from anything really tender & light colored like Sole or Cod .. darker fish like Salmon has more oil & will hold up a bit better... Swordfish, shark & other meaty fish will hold up the best as a rule, but again it depends on how its frozen & handeled more then anything else.

Shrimp and lobster don't suffer much from freezing as long as they don't thaw at all.
Even if they thaw a little on the way home they get worse.
Crawfish don't suffer much from freezing either.
Crab is okay too, but you have to steam it frozen and it's really easy to overcook.
