There won't really be a difference if they're based on the same architechture and they're clocked at the same speeds with the same specs. Cooling them will be a different matter.
Next time you buy a server, why not get a dual socket motherboard anyway (since with 2 SC's you would need that anyway) and pop in 2 DC processors, for 4 core greatness!
Actually, I'd say that there might be a difference, if very slight, depending on the kinds of programs running. A DC chip draws from a shared bank of memory, while 2 SC chips would probably use NUMA, making memory accesses to the other chip's bank more expensive at the gain of making accesses to its own memory bank more quickly.
