I just stepped up my 9800GTX to a GTX260 a few days ago. So EVGA hasn't shipped out my GTX260 yet. Now I see that the 9800GX2 is the same price as a GTX260, I am thinking of trying to change my Step up order before they ship out my GTX 260. Can someone please break this question down for me? I only have a ASUS P5B so I won't be doing any SLI Anytime soon.
Which is a better overall GPU for FPS Gaming?

In terms of raw performance, a 9800GX2 is faster.

But, it's hotter, uses more power, and more clunky because it's a dual card setup.

For these reasons, I will say that the GTX 260 is the better card.

Edit: It also has 896MB of VRAM for 1 GPU, instead of 512MB effective (each for 2 GPUs).

I'd go for the GTX 260. It isn't worth the trouble trying to do a workaround on SLI problems with the 9800GX2 that some games don't support.

If the game has proper SLI scaling, the 9800GX2 is faster than a GTX280. If you are gaming at 1920x1200, the GX2 can pretty much handle that resolution as well. If the GX2 does not scale, it will be slower than the GTX260 & 280.

I'd go with the gtx 260. they don't seem to have had the annoying quality issues that have plagued the gtx 280. also, it will almost certainly OC a lot better than 9800gx2. It is a newer architecture. It has more ram. It is not a filler card that nvidia threw out at the last minute to maintain a lead over amd so it will probably be "good" longer. last time nvidia did the sandwich card with 7950gx2 it was competitive with 8800gtx at launch but got it's ass kicked 6 mos later. no microstutter.

please let me know if the above paragraph was not enough to convince you to get the gtx 260. If necessary, I'll get you in touch with bfg10k and let him give you about 50 more reasons.
