Which drive should I use?

I am upgrading my system to a Athlon64 3000 with 1gb Ram and was wondering how I should hook my hard drives up. I currently have a Maxtor 40GB 7200rpm with 2mb cache and a Maxtor 160GB 7200rpm with 8mb cache. I had the 160gb setup as my storage drive. Should I keep it this way. Should I upgrade to a another 160gb drive with a 8bm cache? I could also use raid if i had another 160gb drive. I just don't want to waste money if I won't notice much differences. Thanks.
