Which CPU should I get?

I have about $500 to spend


Mobo and GPU:

DFI UT Ultra-D SLI nF4 mobo

7800gtx 512 x2

get the opty and spend the balance on some good ram

Already have good ram(mushkin black level 2 bh-5 )

That ram should work in a DFI boards but the DFI boards are picky and that ram is not at the top of the DFI list. It will probably be fine. I would get an opteron dual core. Just depends on how much money you want to spend. Most games do not take advantage of dual core but some do and more are on the way.
