Which core temperature monitor should I trust?

I'm getting conflicting CPU temperature readings from different programs. My BIOS says the idle temp is around 50 cel, the Easy Tune 5 software that came with the P35-DS3R is reading 33 cel, while Core Temp 0.95 is at 29 cel, which do I trust?

I've read around a bit and now I'm even more confused, something about TJunctions, if I enable Delta to TJunction in CoreTemp 0.95 I get readings similar to BIOS of around 50 cel. Is this more correct?

Furthermore, is this a normal temperature for stock HSF at idle?
 
I've got pretty much the same system, but I'm using a Scythe Infinity cooler, and I'm confused about temps too.

Idle Temps:

BIOS/Easy Tune are the same: 23C CPU and 44 System
Seems low to me, but possible I suppose. I'm also not sure why the system and CPU temps are so different.

SpeedFan: 17C Core0, 18C Core1, 44C Temp1

CoreTemp 0.95: Same core temps as SpeedFan, and showing TJunction 85, so I guess actual core temps are 32/33C?

Does that sound right?
 
I personally get 55 on both cores with speedfan 4.32 and coretemp 0.95 shows 70 on both exactly +15, all numbers for loaded. I think some people say trust core temp, and some go with speedfan. I'm going with speedfan right now but not very sure.
