6800GS cooking for 152 or 6800GS OC'd for 170 or bung in the extra 50 for a 7800GT?
The 50 will have come from somewhere so 3700 down to a 3200?

Decisions Decisions!! Heeeeeellllpppppppp!!!!

Never get an OC'd card for more, since it's the same card as stock except that they did OCing themselves. Go for the 3200+ and 7800GT, and overclock the AMD to the top speed of that core... I'm sure you can get it up to 3500+ speeds since they all use the same core.

You neglected to mention on "OC" card from a manufacturer (generally BFG) carries the full warranty on an overclocked card (which in BFG's case is lifetime warranty), while any overclock done by the consumer VOIDS the manufacturer's warranty. That's worth mentioning.

Well, true, there's the warranty part. But I also thought that the eVGA -AX cards could be overclocked without voiding the warranty?

CPU power isn't that important in gaming.

Order of Importance:
GPU Power > Amount of RAM > CPU Power

I'd get the 7800GT with the 3200+. I have a 3700+, but I should have gone with a 3200+ and saved myself 100 bucks.
