If you can find a free range farmer, you can sometimes buy half a cow for a chunk of change (I can't remember off-hand $2K-or-so I'd guess) and they should be able make all the standard cuts for you. That should last you at least a year. That's what my fiance did when she lived in Wyoming anyway.
