I think one of the most important skills for a beginner to learn is the importance of using layers and how layers can be manipulated in many ways to achieve the result you want. Also, if a layer doesn't work out right, you can always delete it and start over (versus changing the base image itself).
the lynda.com photoshop for photographer lessons are actually pretty good.
