Where do restaurants get spongy tofu from?

At some chinese restaurants, they have "spongy" tofu which seems to have air pockets inside, and feels like a sponge when you touch it. The only stuff I have seen in stores is the soft or firm tofu that is a solid mass like jello. Do restaurants buy the spongy tofu from somewhere, or can they make it from the soft or firm tofu somehow?

I've tried deep frying non-frozen regular tofu before, and it doesn't attain the spongy-ness. It stays in a cube, and gets a hard shell of cooked tofu around it.
