Where can one buy a brand-new car that's not the latest year?

I am looking to buy a brand-new car, but don't necessarily want the latest, 2005, model. Do they have these stocked anywhere, or are they sent back to manufacturers and crushed?
 
Most dealers have one or two left over model year cars.

The question is why? The car is hugely depreciated, but the dealer in most cases still has to make a profit on the car, so getting a really good deal is almost impossible.
 
Heh, I was obviously joking about the "crushed" part. It may sound like a dumb question, but the manufacturers' web sites do not feature these older cars, and I hear commercials on the radio all the time that "to make room for new inventory, older models must go"...
