I am going to make some miso ramen, but it seems that getting just pork or chicken bones as I could in japan wont be as easy as I have never seem them.

I havent really looked either. Anyone know a good place to get them? Or should I just buy some chicken and rip the bones out?

Ask your butcher.

That is how you make stock. With bones and connective tissue.

go to an asian market and ask the meat department in the back. They usually can give them to you for free

yep and home made stock is infinitly better then anything you can buy

you coudl always like debone a chicken yourself, BAM you got bones

harder for pork, tho you can get pork shoulders & knuckles in most grocery stores

I only need enough for two tonight. So I might just buy some chicken. I need about 3/4 - 1lb of bones. How much chicken would that take? I will have to find something to do with this chicken. Shouldnt be a problem.

No local china or japan town here. I have butchers they are just closed tonight. I wanted to make it tonight. I could go the cheap route and use a chicken stock tonight. I think I might do that and hit up the butcher later.

Just boil a chicken and pick the meat off of it. You can use the boiled chicken for chicken salad and the bones for your stock.

Really the way to do it is in large volume (20 qt stockpot and 10-15lbs of bones) and freeze the stock in small containers for future use.

Yeah I plan to make a bunch. Just wanted a quicj fix for now. And as far as i know the chicken/pork bones should be uncooked as they would lose their flavoring power after being boiled.

If you were in Boston, I'd direct you to the Mayflower Poultry Co. in East Cambridge. Crazy that it's now kind of a tourist attraction because of the sign out front... many ppl think the place is actually called "Live Poultry Fresh Killed" (pics). :)
