Whole Foods or Trader Joes perhaps? I didn't remember seeing it the last time I was Trader Joes, and really don't want to make the trek to Whole Foods...

Why not buy some uncured bacon or saltpork, then season it your self to taste like Pancetta? If you don't know what too look for ask a local butcher or meatshop.

Living in the suburbs, I can't remember the last time I saw a local meatshop =/

Sad to hear that. Though I have one dedicated meat market in my local suburb. Check your yellow pages and there may be one with in a short drive that you never knew exited. Also many large cities like Tampa have dedicated Italian markets (5-6 locally) and many people do not know about them. They also have a butcher inside that will prepare any type of meat that you desire.
