When you're using other websites for inspiration, how much copying is too much?

I really don't think they look very similar. In other words I think you did "pull inspiration" and didn't "copy." Of course IANAL

EDIT: Your about pages "Passion" for him and "Artist" for you are pretty similiar... you might want to think about mixing that up a bit. Ex. you both have picture and two columns of text that look very similiar. Even something like trying the picture on the right or something, but that's just me.

Any reason to not just drop the dude an email expressing your appreciation for his website and asking him to look at yours to let you know if, as a fellow artist and photog, he feels you've infringed on his work?

That would seem like the quickest way to the spirit of the question of copyright - i.e. does the originating artist feel like you are exploiting his work, versus is he flattered that his artistry inspired you in some manner?

If you have a nagging suspicion/concern that he's going to not be happy with your website or its premise, then I think that is your sub-conscience telling you the answer to your question already IMO.
