Well I have a motherboard that can be upgraded to 1GB DDR ram, I currently have two sticks of 256 DDR. So, two questions...

Which company makes the best ram?

Does the performance differ if I were to buy one stick of 1GB ram or two sticks of 512?

its not who makes the best ram . its who makes ram that works well with your particular motherboard. go to your motherboards website and see whats on there recommendation list. what speed is the ram? pc 3200??? what brand are the 2 256's? and speed? me i wouldnt mix brand or speed with what you have get the same brand same speed.
 
Is your motherboard dual-channel? If so, then 2x512MB sticks will out perform a single 1GB stick. But if it's not dual channel, then there shouldn't be any difference between them.

I would stick with two seperate sticks of ram, first of all because they're more versatile and secondly if one craps out at least you still have 512 left.
 
Double check your mobo's manafacturer site or the ram's site for compatibility. Some mobos will not run stable with some kinds of ram.
