when meat is described as "gamey" what does that mean?

I haven't heard a good explanation as to what "gamey" means. People seem to have just memorized from stories which animals are gamey and that's where these opinions are formed. When I ask people what they mean the response is usually "uh, I don't know... it's just gamey".

So?

It's got a stronger flavor to it. Not so much organ tissue strong (liver), but it has a certain...tang to it that most domesticated animals do not have.

Describe sweet, or bitter, or sour to someone who has no clue what those attributes are actually like.


Gamey to me is pretty much indescribable. It's sort of... wild... tasting I guess. Maybe a form of sour, but really not sour just.. gamey.

You can sometimes soak game meat in milk or other marinades to help cover it up, personally it doesn't bother me much because I'm a man.

i was served venison once. that was gamey. not a flavor i liked.

i was served elk on multiple occasions. that was awesome.

And it also depends on what they eat. Deer who live off of farm crops will taste less gamey than deer who live in the forest.

From watching Andrew Zimmern Bizarre Foods and his descriptions, would ammoniated be accurate for trying to describe gamey?

I've eaten elk meat (steak). I thought it tasted like liver, which I don't care for. But made into jerky elk meat tastes good.

So I think gamey is comparable to liver tasting.

elk is a sweet meat. it tastes kinda like a sweet beef.

I never liked the aftertaste of venison (deer meat). Also can't stand lamb, goat, or 'gator for the same reasons.

Isn't part of the gamey smell/flavor due to the abundance of lean, strong muscle vs the fatty stuff of domesticated meat? Also diet of the animal.

Grass-fed range cows should taste have a stronger or different flavor than pen-raised, grain-fed, steroid injected mutant cows.

No it was elk. My brother-in-law killed it and he had a freezer full of meat. He gave me some of it. Tastes like liver.

I find Australian Beef to have somewhat of a gamey flavour as well. At least what little I have eaten anyway.

why would you even consider Aussie beef?

It wasn't something I chose. A GF bought some once cause it was really cheap. It was an interesting experience. Not as gamey as venison, but somewhat similar.
