This really depends on who's testing, but...

Test missiles don't usually have an active warhead, so they don't blow up. They just land somewhere after their fuel is expended. Whether they're picked up later or trashed, depends on what data they want out of the test.

I'd think that they might put a minimal amount of explosives in the missile in case it was obtained by the wrong sorts of people - i.e. someone who could reverse engineer some of the guidance systems, etc. Else, you'd want to be in control of the area where the missile was intended to come down. But.. if something goes wrong, seems you would want some soft of self destruction.

^^Yup, that's what they would have if anything. Depends on the testing country's confidence in controlling their equipment (or equivalent paranoia) I suppose. Missile tests are the international showcase of "look how far I can reach out and smack someone!"

Haven't you seen air-crafts circling above for NON-STOP Flights?

It never STOPS.

If you fly, let's say, from NYC to LA and they say - it's a NON-STOP flight, it's not true, because aircraft flying fom NYC to LA - has a STOP - LA...

Don't be surprised, if someday missile launched in Iran, will hit Emire State Building in NYC....

Upon further reconsideration, I'm not certain that there would necessarily need to be some sort of "explosive" self-destruct mechanism. However, I think it would be prudent in any cases of state of the art technology that there be some way of destroying said technology, which very well may simply mean destroying the memory and programming in some chips.

If the tech was a first-run, nobody-has-this-yet type, the test vehicle wouldn't be flown in an airspace that wasn't completlely US-Controlled to begin with. That's why we have White Sands Test Range and others like it.

This. Whitesands is part of a huge complex where they test all sorts of things. There are other armories all over the country.

Assuming the missile doesn't impact an airborne entity, it will eventually impact either land or water. If done in a less-than-controlled state, impacting either land or water will result in many, many bits of missile. Likely done in a controlled area of land or in an area of the ocean that is very deep.
