Some nice looking screens... Too bad I can't do any of this with my iPad 2. Also looks like Apple is going to try to limit Jailbreaking as much as they can... Something about making reversions impossible.
Can any of that be done without Jailbreaking?
You have to be jailbroken to change the themes
Not many grownup themes above, seriously that hello kitty crap on a grown man's phone? wow.

Heres what mine looked like before I cleaned it. Tested out iOS 5 then put it back to normal and havent re-jailbroken yet.

That's a nice lockscreen, but what does your homescreen look like? 😉
I was hoping to see more screens like QueBert's. I would be really interested to see a "minimalistic" iPhone homescreen that could still access 30 or so functions/apps.

This is my homescreen. Be aware that I haven't re-jailbroken my phone since messing with iOS 5. I usually have 5 icons in the dock.

It's very sad that you have to "hack" the device to truly customize it. And it amazes me that iPhone people are ok with this year in and year out. 07, 08, 09, 10....I'm willing to bet the new one will still be a screen filled with a bunch of square icons... i am sad panda. 🙁
Why is this "very sad"? Do you understand that the vast majority of people don't customize, and don't care that they don't? Sure, its nice to have, and nerds do it to the extreme...but most people really don't. Almost every Android phone I've seen used by an "average user" uses a standard launcher with a standard theme. Maybe a different background and a widget or two, but that's it.
Those folders don't look very appealing. I was thinking something like Launcher Pro:
From that one homescreen, I can launch 30 different apps. When I had my iPhone, my one wish was to be able to hide the app icons.
Thankfully for us, this is Anandtech, a forum for people who are more than just average users. I see no problem with requesting more standard customization options.
Stop thread crapping and get out.
Right, and the people on Anandtech that are more likely to customize are also quite capable of jailbreaking, so I really fail to see the problem or why its "very sad". You can prefer it be easier, that's fine, its the extremes.
Yes, we all know how to jailbrake, root, etc. But the point is that it would be nice if we didn't have to always do that just to get nice customization going. We should always be asking more from the designers and manufacturers, otherwise they see no need to try harder and innovate.
Hey, we thought the Bootloader check from Oct 2009 iPhone 3GS and later would stop us, but the crackers broke it. Took a while with each release but the untethered JB for later devices was always there. I'm sure the iPad 2 will reach that state soon where they regularly crank out a untethered JB also.
The benefit of iPhone hacking is that you have one GIANT community going at it. With Android, you have talent scattered all over. Some of the devs for some phones are just flat out geniuses, but you wish they could also dedicate some of that effort to other devices. For example, the Motorola Milestone hacking has been insane. We got so much to work on it. Thank goodness so much was shared with other communities like Dx development for the 2nd init that finally is working. I'm pretty sure the Milestone guys helped a ton. But at the same time, a lot of that development is useless for say the guys at HTC cracking the Incredible S. I've seen both sides and while the Milestone crew is still more talented, the IS development team has talent. It's just a shame all that talent needs to be spread thin.
I have mine pretty much normal, because I already have too many jailbreak programs that I NEED, and sometimes things can conflict badly so I try to lower complexity when possible.
But my sister wanted me to jailbreak hers just for the theming so she could do this:
