just thought of some more.

- the water stage in Mario 64.
- most of the music from super adventure island on SNES.
 
Another vote for the water stage in Super Mario 64. I also loved the music in Ocarina of Time. That is probably my favorite. I also remembering the FFVII sound track to be quite exquisite.

The Minecraft OST is pretty good, too if you like electronica.
 
SSX 3 was excellent. Halo was very theatrical, and worked because of that, IMO. Gears 1 music set the tone well too. And cemented the "Must include epic music with commercial" trend.

OSTs from the Silent Hill series... esp Silent Hill 3.

Also some music from Doom, Max Payne, Homeworld Cataclysm , and lots of DOS games... the MOD from Epic Megagames (UT99, etc)
