damn..I forgot that one, fresh young blue grouper, the large ones tend to be a bit fatty
Baked or fried in batter...It doesn't matter, damn fine fish.

just a pity it's illegal to catch them in NSW...over fishing has lowered there numbers to near critical levels...it's been years since I've had grouper
 
Scamp, amberjack, swordfish, mahi mahi, red snapper, grouper, salmon, redfish, flounder.

I never met a fish I didn't like to eat.

Discovered an interesting bit of information about scamp - "Remarks: spawns in late spring; feeds on small fish, squid, and crustaceans; undergoes sex transformation from female to male as it becomes older."
