What's your favorite cheesecake recipe?

I've got a new spring form pan I want to put to use. I've been browsing epicurious etc and there are a lot of really good cheesecake recipes out there (although it is impossible to find a recipe for just a plain jane cheesecake).

What's your favorite and any tips on baking them?

This one. I've made it several times and it never fails to get raves. Pretty much everyone that tries it thinks it's the best cheesecake they've ever tasted. Follow the instructions and it's pretty simple.

Some tips

Bake in a water bath
Follow the recipe exactly including the order in which the ingredients are added. It makes a big difference in the final quality
Get your cold ingredients like the cream cheese, eggs and sour cream to room temp before mixing. Again, big difference.

looks soo good, imma attempt it this weekend... one question though, why do i need the water bath during baking? and do i just put the springform pan in a pot and fill the pot with some water?

It prevents the edges from overbaking and the top from cracking.

I use a roasting pan, I never used a pot, the higher sides of a pot might cause a problem, not sure. Wrap foil around the bottom up the side of the springform pan to seal it. Otherwise you have a chance of water leaking in, very bad. Fill the water about halfway up the side, heat the water first, don't use cold water.
