The habanero
(Capsicum chinese), is the world's hottest pepper measuring between 200,000-300,000 Scofield units (the Jalapeno by contrast is "only" about 5,000 S.O.).
Many of the extraordinarily hot sauces concentrate the habanero pepper's oil.
My favorite is "Melinda's XXXtra Hot Sauce" which uses habanero chili blended with carrots, onions, lime juice, vinegar, garlic and salt. It is not only hot but it is
tasty.
Right now, I am making enchilada sauce from scratch (Guajillo Chili Pods) and a dash of this adds the "zest" it might otherwise miss.
